Title: Basket Cake [Fruit] Boiled

4cFruit, mixed, originally 2 cups of...
1cCoconut, dessicated OPTIONAL-
5ozMargarine
1cSugar
2tsMixed spice
2 Eggs
1/4tsBicarbonate of soda
1 1/4cFlour, plain
1cFlour, self-raising
1cWater
1tsEssence, vanilla
1/2cWine

Place fruit, water, margarine, sugar and spice in a saucepan. Boil for 3 minutes. Allow to become almost cold, add soda to beaten eggs and stir into mixture. Add flours etc and mix well.

Place in round or square cake tin at about 160^ [electric] for about 1 1/4 hours, depending on your stove. One needs to regulate their own ovens to suit their cakes.
